This is what lunch bell used to be about. Await since morning and then a box which would delight us with the delicious delicacies of mother’s homemade food. Let us remember and thank our mother for the wonderful time she gave us. She gave us the joy of sharing and made us have a wonderful time with our friends.

Hi! I am Kirtika Kavya. I am not a foodie but I still love to have surprises in my tiffin-box. My mommy often tries to make things that I would love. I’m a sweet tooth, so my tiffin-box is often filled with sweet dishes like pancakes, pastries, cookies, etc…And today I am going to tell you one of my favourite recipes i.e. RED VELVET MINI PANCAKES!

Recipe – RED VELVET MINI PANCAKES

Ingredients:

  • Maida/plain flour – 1 cup
  • Cocoa powder – 2 tbsp
  • Corn starch – 1 tbsp
  • Powdered sugar – 6 tbsp
  • Baking powder – 1 tbsp
  • Milk – ½+½ cup
  • Melted Butter – 1 tbsp
  • Vinegar – ½ tbsp
  • Tomato red food colour- 1 tbsp

Method:

Step 1: Take a bowl and sieve

  • Maida/plain flour – 1 cup
  • Cocoa powder – 2 tbsp
  • Corn starch – 1 tbsp
  • Powdered sugar – 6 tbsp
  • Baking powder – 1 tbsp

Step 2: Take a spoon or a whisk to continuously stir and sieve it through, making sure that there are no lumps.

Step 3: Take a separate bowl and pour

  • ½ cup of milk
  • 1 tbsp of melted butter
  • ½ tsp of vinegar
  • 1tsp of tomato red colour

Step 4: Give all the ingredients a good mix.

Step 5: Now, add it to the mixture of Maida, cocoa powder, etc that we had made earlier.

Step 6: Mix and make the batter.

NOTE: The batter needs to be thick lumps free and flowing in consistency; you can add more milk as required.

Step 7: Take a non-stick pan (on low flame).

Step 8: Use a tbsp, scoop out better.

NOTE: 1 pancake=1tbsp better. You can make 4-5 pancakes at a time and make sure that the pan is not too hot.

Step 9: Now cover it with the lid and cook it for about 1 min.

Step 10: Flip the pancakes, cover them with the lid and cook for 1 more min.

Note: try to keep the flame medium.

Step 11: Take them out.

Step 12: Serve it with hot chocolate sauce and caramel sauce.
